Teams compete under strict 2017 KCBS rules, to ensure an unbiased selection process. Our judges put their taste buds to the test searching for the best slow burning wood or charcoal pitmasters. Featuring four meat categories: chicken, pork ribs, pork butt and brisket.
- Each category in the team competition is judged by a team of 6 judges.
- Criteria are taste, tenderness / texture and appearance.
- Points are awarded for each category entered; the team with the highest accumulated points will become “Smokin Q’s Grand Champion”
- All cooking must be done on charcoal, wood or wood pellet barbecues (also called ‘Smokers’ or ‘Pits’).
